## Ingredients

- 1.5 kg Golden Kings potatoes
- vegetable oil
- fajita spice mix
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 1 large onion
- 2 halloumi blocks
- 2 tbsp tomato puree
- 1 tsp honey
- tbsp water
- salt
- soured cream
- coriander
- lime
- pepper

## Instructions

1. Peel and cut the potatoes into medium pieces.
2. Place the potatoes in a large saucepan and cover them in cold, salted water.
3. Bring them to the boil and simmer until tender, but still firm enough that you can shake them up without them breaking.
4. Drain the potatoes and give them a really good shake in the colander to fluff up the edges, then leave the potatoes to steam dry for 15 minutes.
5. Cut up the peppers, onion and halloumi.
6. Heat the oven to 200C (fan).
7. Drizzle vegetable oil in a roasting tin and place in the oven for 3 minutes.
8. Add fajita spice mix into the roasting tin and stir until the spice has mixed with the oil.
9. Tip the potatoes into the pan, turn them over until coated, season with salt and place them in the oven for around 40 minutes turning once.
10. Place the peppers and onion on a separate baking tray.
11. Mix oil with fajita mix and use a pastry brush to paint the spicy oil all over the halloumi strips until coated.
12. Drizzle the rest of the oil over the veg and use your hands to ensure that it's coated and place the halloumi strips in between the veg.
13. When the potatoes have been in the oven for 40 minutes, give them a turn before returning to the oven with the halloumi and veg tray for a final 20 minutes.
14. Mix the tomato puree, honey and water together.
15. When everything is cooked, tip the puree over the halloumi and veg, season with salt and pepper and use a fish slice to turn the mixture over until everything is coated in tomato sauce.
16. Tip the roast potatoes onto a serving plate and top with the Mexican halloumi mix.
17. Finish with some soured cream, coriander and a little lime.
