# Moist Carrot Cake

## Ingredients

- 3 cup carrots

## Instructions

1. Grate the carrots using a box grater.
2. Sift together flour, cinnamon, allspice, kosher salt, baking powder, and baking soda.
3. In a separate bowl, mix the brown sugar, granulated sugar, and eggs with a hand mixer.
4. Drizzle in the vegetable oil while mixing until emulsified.
5. Add the flour mixture to the wet ingredients in thirds, mixing after each addition.
6. Toss the raisins with 1 tablespoon of flour, then fold them into the batter along with the grated carrots and crushed pineapple.
7. Divide the batter into three 8-inch cake pans and smooth the tops.
8. Bake in the oven at 350°F.
9. In a bowl, combine room temperature butter, room temperature cream cheese, and vanilla; mix with a hand mixer.
10. Gradually add powdered sugar, 1/2 cup at a time, mixing until smooth.
11. Trim the tops of the baked cake layers with a serrated knife to make them flat.
12. Place one layer on parchment paper, spread 1/4 of the icing on top with an offset spatula, and repeat with the second layer.
13. Place the final layer upside down on the cake, cover the entire cake with remaining icing, and smooth the sides.
14. Cover the outside of the cake with crushed walnuts.
15. Chill in the fridge before serving.
