# Air fryer potato scones

Golden air fryer potato scones that are crisp on the outside, soft in the middle and packed with cheesy flavour.

## Ingredients

- 500 g white potato, peeled, chopped
- 1/4 tsp sea salt
- 1/4 tsp baking powder
- 40 g butter, chopped
- 100 g plain flour
- 80 g 24-month aged cheddar, grated
- 20 g butter, melted
- plain flour, to dust

## Instructions

1. Place potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat.
2. Drain potatoes, transfer to a bowl and cool.
3. Use a potato masher to mash potato until smooth. Add salt, baking powder, and butter, then stir to combine.
4. Add flour and cheese, then stir until just combined.
5. Turn out onto a lightly floured surface. Evenly divide dough into 3 balls. Press out each ball to form a 1cm-thick, 12cm round. Cut each round into quarters.
6. Preheat an air fryer to 180°C. Cut a sheet of baking paper large enough to come halfway up the sides of your air fryer basket. Gently place scones on top of the paper, not touching.
7. Gently brush scone tops with melted butter and cook.
8. Carefully turn scones over, brush with remaining melted butter, and cook until golden.
9. Transfer to a plate and cover loosely with a tea towel to keep warm. Repeat with remaining scones.
