- 2 pieces lamb steak
- black pepper
- olive oil
- garlic clove, lightly crushed
- bread, firm
- milk
- anchovies
- capers
- 1.5 tsp dijon mustard
- 2 tbsp red wine vinegar
- extra virgin olive oil
- fresh parsley

## Instructions

1. Cut through each end of the lamb steak to prevent buckling and ensure even cooking.
2. Season generously with black pepper and pat it down.
3. Heat oil in a pan and sear the lamb steak.
4. Add crushed garlic cloves to the pan.
5. Use tongs to lift the fat around the back of the lamb, tilt the pan, and render the fat.
6. Baste the lamb with the garlic-infused oil while cooking.
7. Remove the lamb from the pan and let it rest.
8. Slice and dice the bread, then season it in a bowl.
9. Add milk to the bread and let it soak.
10. Make the dressing by pounding the roasted garlic from the pan with anchovies, capers, mustard, red wine vinegar, extra virgin olive oil, and fresh parsley.
11. Squeeze excess milk out of the soaked bread and fry the croutons in an oiled pan until golden.
12. Assemble the dish by spreading the vinaigrette, adding the croutons, and topping with the rested lamb and remaining sauce.
