# Chocolate Chip Cookies

Thin, refined chocolate chip cookies with rippled, crispy, chewy edges and a soft center.

## Ingredients

- 1 stick salted butter
- 140 g dark brown sugar
- 70 g white sugar
- 1 whole egg yolk
- 15 g heavy cream
- 5 g vanilla paste
- 140 g all-purpose flour
- 2 g salt
- 2 g baking soda
- 140 g bittersweet chocolate
- sea salt flakes (optional)

## Instructions

1. Melt the butter about halfway in a bowl and stir until completely melted.
2. Add both sugars to the melted butter and whisk for about a minute.
3. Add egg yolk, vanilla paste, and heavy cream and whisk for another minute.
4. Add the all-purpose flour, baking soda, and salt and gently fold with a spoon or spatula.
5. Mix in the bittersweet chocolate.
6. Place the dough in the fridge to chill.
7. Scoop about 50 grams of dough per cookie and place on a baking sheet.
8. Bake in a 350 degree convection oven.
9. Slam the tray halfway through the bake and again at the end to create the ripples.
10. Let the cookies rest on the pan.
11. Sprinkle the cookies with sea salt flakes and move to a wire rack to finish cooling.
