# Broccoli Cheddar Soup

## Ingredients

- 6 strips bacon
- 3 tbsp unsalted butter
- 1 whole yellow onion, diced
- 3 clove garlic, crushed
- 1/3 cup all-purpose flour
- 4 cup chicken broth
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 tsp kosher salt
- 1/4 tsp ground nutmeg
- 1/4 tsp cayenne pepper
- freshly ground black pepper (optional)
- 3 cup broccoli florets, roughly chopped
- 1 cup shredded carrots
- 4 oz sharp cheddar cheese, freshly shredded
- 4 oz sharp white cheddar cheese, freshly shredded
- shredded cheese (optional)
- crispy bacon pieces (optional)

## Instructions

1. Dice the onion, crush the garlic, and cut the bacon into small pieces.
2. Roughly chop the broccoli if you prefer smaller bites.
3. Shred both cheeses and set aside.
4. Cook the bacon over medium heat until crispy, then remove from the pot, leaving the grease behind.
5. Add butter and diced onion to the pot and cook until softened.
6. Add garlic and cook until fragrant.
7. Sprinkle in the flour and mix until incorporated to create a roux.
8. Add chicken broth and stir to thicken and scrape browned bits from the bottom.
9. Reduce heat to medium-low, then stir in milk, heavy cream, salt, nutmeg, cayenne, and black pepper.
10. Add broccoli and carrots, then simmer until broccoli is tender.
11. Gradually mix in shredded cheese until melted and smooth.
12. Simmer for 5 to 10 minutes, stirring often.
13. Remove from heat and cool for 10 minutes before serving.
14. Ladle into bowls and top with extra cheese or crispy bacon.
