## Ingredients

- Red bell pepper
- Yellow bell pepper
- Green bell pepper
- Carrots
- Celery
- Garlic cloves
- Olive oil
- Potatoes
- White onion
- Mushrooms
- Water
- Cream
- Spices
- Parsley

## Instructions

1. Slice red bell pepper.
2. Slice yellow bell pepper.
3. Slice green bell pepper.
4. Slice carrots.
5. Slice celery.
6. Dice all bell peppers, carrots, and celery.
7. Place the diced vegetables and garlic cloves on a baking sheet.
8. Drizzle with olive oil.
9. Peel and chop a potato.
10. Peel and chop white onion.
11. Add mushrooms, chopped onions, and garlic to a large pot.
12. Stir the mixture.
13. Add the roasted bell peppers, carrots, and celery to the pot.
14. Pour in water.
15. Add cream.
16. Season with spices.
17. Add chopped potatoes to the stew.
18. Continue cooking until the stew thickens and all vegetables are tender.
19. Serve the stew in a bowl and garnish with fresh parsley.
