## Ingredients

- 3 pounds chicken thighs and drumsticks
- 3 cups buttermilk
- 0.5 cup hot sauce
- 2 teaspoons salt
- 1 teaspoon black pepper
- 3 cups all-purpose flour
- 0.5 cup cornstarch
- 1 tablespoon paprika
- 1 tablespoon salt
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon white pepper
- 1 teaspoon cayenne pepper
- vegetable or peanut oil

## Instructions

1. Place chicken thighs and drumsticks in a large mixing bowl.
2. Pour in three cups of buttermilk and half a cup of hot sauce.
3. Add two teaspoons of salt and one teaspoon of black pepper.
4. Toss with tongs to mix the hot sauce and buttermilk together.
5. Cover the bowl with plastic wrap and place it in the fridge to soak for about 4 hours.
6. To prepare the coating, pour 3 cups of all-purpose flour and half a cup of cornstarch into a plastic bag.
7. Add one tablespoon of paprika, one tablespoon of salt, two teaspoons of onion powder, two teaspoons of garlic powder, one teaspoon of dried oregano, one teaspoon of dried basil, one teaspoon of white pepper, and one teaspoon of cayenne pepper.
8. Seal the bag and shake to combine the ingredients.
9. Pour enough vegetable or peanut oil into a large heavy skillet to cover the bottom with about an inch or three-quarters of an inch of oil.
10. Heat the oil to 350 degrees Fahrenheit.
11. Remove a piece of chicken from the buttermilk mixture, letting excess drip off.
12. Place the chicken into the flour and cornstarch seasoning mixture.
13. Seal the bag and shake to coat.
14. Shake off excess flour and place the chicken directly into the oil.
15. Fry for approximately 14 minutes, or until cooked through to an internal temperature of 165 degrees Fahrenheit. It's a good idea to get it at about 172 to 175 for dark meat.
16. Remove the chicken from the oil and transfer it to a paper towel-lined plate to drain and cool.
17. Let it rest for about 10 minutes before serving.

## Equipment

- large mixing bowl
- tongs
- plastic wrap
- plastic bag
- shallow dish
- large heavy skillet
- meat thermometer
- paper towel-lined plate

## Tips

- If you are in a hurry, you can skip the soaking time, but it is highly recommended as the chicken soaks in a lot of flavor.
- For super crispy fried chicken, monitor the temperature of your oil to keep it between 300 and 350 degrees Fahrenheit throughout the entire cooking time.
- Let the chicken rest for about 10 minutes before eating to avoid burning your tongue.
