## Ingredients

- 0.5 cup unsalted butter
- 0.25 cup white sugar
- 0.25 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 1.25 cup all purpose flour
- 0.5 tsp baking powder
- 0.25 tsp salt
- 0.5 cup frozen strawberries, diced
- 0.25 cup white chocolate chips
- 0.25 cup unsalted butter
- 0.25 cup granulated sugar
- 0.25 cup all purpose flour
- 0.5 tsp ground cinnamon

## Instructions

1. In a bowl, mix flour, sugar and cinnamon.
2. Add cold cubed butter to the dry ingredients and mix until it resembles coarse crumbs.
3. Cream together softened butter and sugars until smooth.
4. Add egg and vanilla, mix well.
5. Add dry ingredients to the wet ingredients and mix until just combined.
6. Gently fold in diced strawberries and white chocolate chips.
7. Scoop the dough onto a baking sheet lined with parchment paper.
8. Sprinkle streusel topping over the cookies.
9. Bake at 350°F (175°C) for about 18 minutes, until golden brown.
10. Let cool on baking sheet for a few minutes before transferring to wire rack.
