- 1 whole shallot
- 1/2 whole yellow onion, diced
- 5 whole garlic clove, minced
- 1/3 cup tomato paste
- 1/2 cup crushed tomato
- 1–2 tsp Calabrian chili paste
- 1/2 tsp dried oregano
- 1/3 cup vodka
- 4 cup chicken broth
- 1/2–1 tsp Better Than Bouillon chicken base
- Parmesan rind (optional)
- 3/4 cup heavy cream
- 1/2 cup Parmesan, freshly grated
- 16 oz potato gnocchi
- salt (optional)
- black pepper (optional)
- 1–2 tsp lemon juice (optional)
- 1/2 cup whole milk ricotta
- 1 tbsp Parmesan
- 1/2 tsp lemon zest
- 1–2 tsp olive oil
- fresh basil (optional)
- chili oil (optional)

## Instructions

1. Brown sausage in large chunks over medium-high heat, pressing into the pan for crispy edges. Break apart, cook through, then remove, reserving 1–1½ tbsp fat.
2. Sauté shallot and onion for 4–5 minutes. Add garlic and oregano for 1 minute, then stir in tomato paste and Calabrian chili. Cook 3–5 minutes until deep red.
3. Deglaze with vodka and simmer for 2–3 minutes.
4. Add chicken broth, chicken base, Parmesan rind, crushed tomatoes, and most of the cooked sausage. Simmer for 12–15 minutes.
5. Meanwhile, whip ricotta with Parmesan, lemon zest, olive oil, salt, and pepper until smooth.
6. Remove rind from soup, reduce heat, and stir in heavy cream and Parmesan.
7. Add gnocchi and gently simmer for 2–4 minutes until tender. Thin with broth if needed and finish with lemon juice to taste. Serve with whipped ricotta, crispy sausage, basil, and Parmesan.
