## Tips

- No need to wait between applying salt, sugar, and five-spice powder.
- Coat the meat thoroughly with each seasoning and sauce.
- Check the meat by cutting into the middle to ensure it is cooked through before serving.
- For the sugar and five-spice powder, use two or three pinches, depending on the amount of meat. This is about one teaspoon or a little bit more.
- The quantity of Hoisin sauce should be enough to cover the meat.
- The amount of salt should provide a good coating for the meat.
- For sugar and five-spice powder, a good sprinkle is sufficient to cover the meat.
- The salt and sugar will absorb some water from the meat, which is fine and doesn't require pre-drying the meat too much beforehand.
- After 25 minutes (halfway through cooking), turn the meat over to the other side.
- The amount of salt used should coat the meat well for all three pieces of meat.
