- a small amount blue spirulina (optional)
- a decent amount matcha powder (optional)

## Instructions

1. Mix together the egg white and allulose powder until you get a solid pastey consistency.
2. Separate the mixture into smaller bowls to incorporate the different color dyes.
3. Add a pinch of red beet powder for pink, a small amount of blue spirulina for light blue, and a decent amount of matcha powder for light green to the separate bowls and mix well.
4. Transfer the colored mixtures into separate piping bags.
5. Pipe your desired designs onto parchment paper using stencils if desired.
6. Air dry the sprinkles until set.
7. Scrape the hardened sprinkles off the parchment paper using a bench scraper.

## Equipment

- bowl
- wooden spoon
- small glass jars
- spatula
- piping bags
- parchment paper
- stencils
- bench scraper

## Tips

- You can adjust the amount of egg white and allulose powder until you reach the correct paste consistency.
- The paste should not be so wet that the sprinkles spread, but not so solid that it has a grainy texture.
- While the creator recommends air drying overnight, you may only need to wait a few hours.
