## Ingredients

- 1.5 cup brown sugar
- 1.5 cup shoyu
- 1 cup water
- 2 tbsp sesame oil
- 2 tbsp miso paste
- 3 tbsp garlic, minced
- 2 tbsp ginger, minced
- 1/4 cup honey
- 2 tbsp thai chili
- beef, sliced
- baking soda

## Instructions

1. Mix all marinade ingredients until the brown sugar and miso are fully dissolved.
2. Add baking soda to the sliced meat, then pour marinade over the beef.
3. Marinate for 24 hours.
4. Pat the beef dry.
5. Place into your oven, pellet smoker, or offset smoker at 200°F for about 5 hours.
6. Pan sear the meat for a crispy, caramelized finish if desired.

## Tips

- Thai chilies are used as a substitute for Hawaiian chili pepper.
- The beef can be stored as is after smoking or pan seared Helena’s-style for a crispy edge.
- Serve with rice and poi.
