## Ingredients

- 2 ea sweet potatoes
- 1 handful kosher salt
- 1 tablespoon Dijon mustard
- 2 tablespoons cold butter

## Instructions

1. Start by peeling two sweet potatoes.
2. Cut your sweet potato into more manageable pieces, like a large dice or half-moon, to help them cook more evenly.
3. Add a decent handful of kosher salt to the cut sweet potatoes.
4. Cover the sweet potatoes with cold water.
5. Cook the sweet potatoes over medium heat, just like making mashed potatoes.
6. Once the sweet potatoes are cooked, strain them and put them right back into the pot.
7. Put the pot over medium to low heat and let them steam on the burner to steam out some of the excess water.
8. Add the steamed potatoes into the bowl of a food processor.
9. Add about a tablespoon of Dijon mustard to the food processor.
10. Add a pinch of kosher salt.
11. Add two tablespoons of cold butter (one tablespoon per sweet potato) to the food processor.
12. Process the ingredients until smooth.
13. Serve the mashed sweet potatoes.
