# High-Protein Spicy Salmon/Crab Sushi Bake

A healthier, high-protein take on a classic Hawaiian-style sushi bake.

## Ingredients

- 3 cup cooked white rice
- 1 package sushi rice seasoning
- 1/2 cup cottage cheese, blended
- 1/4 cup kewpie mayo
- 1-2 tbsp sriracha
- 6 oz imitation crab
- 8 oz grilled salmon, flaked
- 1 whole egg
- 1/4 cup diced cucumber
- 1/4 cup green onion
- 2+ tbsp unagi sauce
- 1/4 cup furikake
- nori (optional)

## Instructions

1. Season warm rice with sushi rice seasoning and fold into the rice.
2. Spread rice into a 9x13 dish and top with half the furikake.
3. Mix cottage cheese, mayo, sriracha, crab, salmon, cucumber, and green onion in a bowl.
4. Spread the mixture over the rice base, then drizzle with unagi sauce and the remaining furikake.
5. Bake at 400°F for 10–15 minutes, then serve warm with nori.

## Tips

- If you do not have sushi rice seasoning, mix 3 tbsp rice vinegar, 3 tbsp sugar, and 1 tbsp salt until dissolved.
- Add more Kewpie mayo if desired.
