# Traditional Scottish Stovies

## Ingredients

- 20 g butter, softened
- 200 g onion, finely chopped
- 500 g beef mince
- 400 ml water, warm
- 4 whole potato, large, cut into 8 pieces each
- 300 g root vegetables (carrot and turnip), chopped
- salt (optional)
- pepper (optional)

## Instructions

1. Chop the potatoes into eight pieces each.
2. Melt the butter in a large stockpot.
3. Add the finely chopped onions and cook until softened.
4. Add the minced beef and cook until completely browned.
5. Stir in the chopped root vegetables and cook for 5 minutes.
6. Add the potatoes and warm water to the pot.
7. Season with salt and pepper to taste and stir to combine.
8. Bring to a boil, then reduce heat and simmer for 30 minutes.
9. Turn off the heat, cover with a lid, and let stand for 15 to 20 minutes to thicken.
10. Turn the heat back on and simmer for another 5 minutes before serving.
