## Ingredients

- pork shoulder or pork collar meat, cut into 2 cm thick slices
- spring onion
- ginger
- cooking wine
- light soy sauce
- oyster sauce
- salt
- pepper
- a small pinch baking soda
- cornstarch
- tapioca starch
- oil

## Instructions

1. Cut the pork meat into two centimeter thick slices.
2. Gently pound the meat with the back of a knife.
3. Marinate the meat with spring onion, ginger, onion, cooking wine, light soy sauce, oyster sauce, salt, pepper, and baking soda.
4. Let it sit in the fridge.
5. Remove the onions from the marinade.
6. Mix in cornstarch, tapioca starch, and a little oil.
7. Fry the pork chops over medium heat until golden brown and cooked through.
