## Ingredients

- 8 large eggs
- 8 tbsp grass-fed butter
- 8 ounces cottage cheese (or cream cheese for a richer texture)
- 1 tbsp ground cinnamon (optional but recommended)

## Instructions

1. Preheat your oven to 350°F (180°C).
2. Prepare a loaf pan: grease it lightly and line with parchment paper for easy removal.
3. Blend together the eggs, melted butter, cottage (or cream) cheese, and cinnamon until completely smooth and creamy.
4. Pour into the prepared loaf pan and bake for 30–40 minutes, or until it’s puffed, golden, and a toothpick comes out clean.
5. Cool in the pan for 10 minutes, then transfer to a rack to cool completely.
6. Slice and serve warm or chilled, topped with extra cinnamon or sugar-free maple syrup.

## Equipment
