# Potato Soup

A hearty and easy-to-make potato soup featuring bacon, cheese, and a creamy base.

## Ingredients

- 4-5 whole potato
- 4-6 strip bacon
- 1 tbsp olive oil
- 1-2 tbsp garlic
- 0.5 stick butter
- 0.5 cup flour
- 2 cup chicken stock
- 3 cup milk
- salt (optional)
- pepper (optional)
- parsley (optional)
- 16 oz Velveeta
- 0.5-1 cup sour cream

## Instructions

1. Poke potatoes with a fork and microwave for 12 to 15 minutes.
2. Add olive oil to a pan and let sweat.
3. Add garlic and onion and cook until there is color.
4. Add butter to the pan and let melt.
5. Whisk in flour to create a roux and cook for a couple minutes.
6. Whisk in chicken stock and milk, then bring to a light boil.
7. Cut the cooked potatoes into bite-sized pieces.
8. Season the soup with salt, pepper, and parsley.
9. Add cubed Velveeta, sour cream, and chopped bacon to the soup.
10. Once cheese is melted, turn off heat, fold in cooked potatoes, and serve.
