## Ingredients

- 2 sheets puff pastry
- 3 tbsp butter, melted
- 1 egg
- 1 tbsp water
- 1 cup AP flour
- 0.5 cup brown sugar
- 0.25 cup rolled oats
- 0.5 tsp cinnamon
- 6 tbsp butter, melted
- 5.5 cups frozen wild blueberries
- 0.5 cup brown sugar
- 0.5 cup granulated sugar
- 5 tbsp AP flour
- 4 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla
- 2 tbsp cold butter, cut into small pieces

## Instructions

1. Preheat oven to 375F. Line a baking sheet with parchment paper.
2. Make the crumble topping by combining 1 cup of AP flour, ½ cup of brown sugar, ¼ cup of rolled oats, ½ tsp of cinnamon, and 6 tbsp of melted butter in a bowl. Mix until crumbly.
3. Make the blueberry filling by combining 5 ½ cups of frozen wild blueberries, ½ cup of brown sugar, ½ cup of granulated sugar, 5 tbsp of AP flour, 4 tbsp of cornstarch, 1 tbsp of lemon juice, and 1 tsp of vanilla in a large bowl. Mix well.
4. Cook the blueberry mixture in a large saucepan over medium heat until it thickens. Remove from heat.
5. Lay out one sheet of puff pastry on parchment paper and slightly roll it out. Use pastry rings to cut out 4 rounds of dough for the base. Set aside.
6. Lay out the second sheet of puff pastry on parchment paper, and slightly roll it out. Use the width of the pastry rings to make marks along the edges. Cut into strips, using the marks as a guide.
7. Lightly brush the inside of the rings with melted butter. Place the rings on a baking sheet.
8. Place one round of puff pastry into the bottom of each ring. Brush the edges with egg wash.
9. Form and press the strips of puff pastry around the inside of the rings, pressing at the bottom. Secure where the ends of the strips meet with egg wash.
10. Divide the filling among the pastry rings and press a few butter cubes into each. Evenly sprinkle the crumble topping on top.
11. Bake at 375F for 45-55 minutes until puffed and golden. Run a knife along the edges and release the tarts.
12. Plate and serve with crème anglaise or ice cream.
