- 1 Tbsp unsalted butter
- 12 large eggs
- 100 g cheddar cheese, grated
- ground white pepper
- 6 low calorie wraps

## Instructions

1. Crack 12 whole eggs into a mixing bowl, ensuring there is no shell in there.
2. Break up the yolks and mix it all together until it is nice and smooth with a whisk or a fork.
3. Grate 100g of cheddar cheese on the larger side of a box grater.
4. Place a large pan over a medium high heat with spray oil, olive oil or butter.
5. Add 750g of 90% lean beef mince.
6. Let it sit for a minute to build up a crust, then start breaking it up.
7. Add in a pinch of salt and cracked black pepper and cook it for about 5 to 6 minutes, or until no longer pink.
8. Add 2 tsp of smoked paprika, 1 tsp each of onion and garlic powder, 1 tsp each of dried oregano and dried thyme, 1 tsp of ground cumin, 1 can of diced tomatoes, and a splash of water.
9. Mix it all together and cook this for about 2 to 2 and a half minutes.
10. Remove from stovetop into a bowl.
11. Re-use the same pan for the scrambled eggs.
12. Add 1 Tbsp of unsalted butter.
13. Add in the egg mix.
14. Fold everything until you get long ribbons or curds.
15. Season to taste with salt and ground white pepper.
16. Turn it off the heat, then add in the grated cheese and use the residual heat to melt the cheese.
17. For each of the 6 wraps, add 125g of the beef mix and 120g of scrambled eggs.
18. Add sauce of choice and cracked black pepper.
19. Wrap it up nice and tight and make sure nothing is bursting out of the seams, with the seam sitting at the bottom.
20. Place them onto a baking tray lined with parchment paper, add over a little bit of spray oil, and place them into an oven at 200 degrees Celsius.
21. Bake for about 15 minutes until you get a nice crunchy golden top.
