# French Onion Chicken

## Ingredients

- 2 piece butter
- oil
- onion, sliced
- salt
- pepper
- balsamic vinegar
- chicken breast, butterflied
- flour
- 2 1/2 cup beef broth
- gruyere cheese

## Instructions

1. Add a piece of butter and some oil to a hot cast-iron pan and sauté the sliced onions.
2. Season the onions with salt and pepper.
3. Lower the heat and add balsamic vinegar, then continue cooking until caramelized.
4. Remove the onions from the pan and set aside.
5. Add more butter and oil to the same pan. Season the butterflied chicken breasts with salt, pepper, and flour, then add to the pan.
6. Flip the chicken to sear on both sides.
7. Remove the chicken from the pan.
8. Return the caramelized onions to the pan, add the flour, and stir.
9. Pour in the beef broth and stir.
10. Season with salt and pepper, then add the chicken back in to finish cooking and allow the sauce to reduce.
11. Top each chicken breast with gruyere cheese.
12. Melt the cheese using a torch or by placing the pan in an oven or broiler.
