## Ingredients

- 12 slices thick-cut slices of brioche bread or brioche rolls, preferably dried out overnight, cut into 1” cubes
- 1 turbinado sugar
- 1.75 lb apples of choice, peeled & diced
- 5 apples
- 4 tbsp salted butter
- 2.5 tbsp all-purpose flour
- 1 tsp apple pie spice
- 0.75 cup brown sugar
- 0.5 cup water
- 1 cup milk of choice
- 1 cup heavy cream
- 1.5 tbsp salted butter
- 0.25 cup granulated sugar
- 1 pinch salt
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 0.5 tsp apple pie spice
- 4 eggs, at room temp

## Instructions

1. Preheat oven to 350F. Grease a 9" round baking pan with cooking spray, then line with parchment paper. Place onto a baking sheet.
2. Prepare apple pie filling: In a medium saucepan over medium heat, melt butter. Add flour and apple pie spice, stir well. Add brown sugar and stir.
3. Add diced apples and water, stir and cover. Cook until apples are soft, stirring occasionally (10-15 mins).
4. Remove from heat and strain the juices, saving them to top later.
5. Prepare custard: Combine all ingredients except eggs in a saucepan over medium-low heat. Whisk until butter is melted.
6. Remove from heat, add eggs one at a time, whisking in between. DO NOT cook any longer. Set aside.
7. Place 1/3 of bread cubes into the prepared pan. Press down.
8. Spread ~1/3 of apple pie filling on top. Repeat the process 2 more times, finishing by topping with the last 1/3 of bread cubes and apple pie filling.
9. Pour custard over the bread, then gently press down. Sprinkle the top with turbinado sugar.
10. Bake at 350F for 35-40 mins, until golden and set but still slightly wobbly. Remove from oven. Rest for at least 10 min.
11. Serve warm with vanilla ice cream and the juices from the apple pie filling.
