# Bandeja de felicidad (Croquetas de cecina y queso azul)

## Ingredients

- 1 taco mantequilla
- 1 whole cebolla roja
- sal (optional)
- 1 bag Doritos tex-mex
- 1 whole cecina de león
- 1 tbsp harina
- 1 cup leche
- 1 slice queso azul
- 1 whole huevo

## Instructions

1. Finely chop the red onion.
2. Melt the butter in a pan and add the chopped onion and a pinch of salt.
3. Pulse the Doritos in a food processor until they have a texture like panko breadcrumbs.
4. Finely chop the cecina.
5. Add the cecina to the pan with the onion and sauté for a couple of minutes.
6. Stir in the flour and cook for a couple of minutes to remove the raw flour taste.
7. Pour in the cold milk and stir until the mixture thickens.
8. Mix in a slice of blue cheese until melted.
9. Transfer the mixture to a container, cover with plastic wrap, and refrigerate.
10. Shape the chilled mixture into balls, coat in flour, dip in beaten egg, and roll in crushed Doritos.
11. Deep fry the croquetas in hot oil until golden brown.
