# Microwave Sticky Toffee Pudding

A quick and easy single-serving sticky toffee pudding made entirely in the microwave.

## Ingredients

- 2 tbsp unsalted butter
- 3 tbsp dark brown sugar
- 3 tbsp heavy cream
- 1 pinch salt
- 2 whole medjool dates
- 1/4 tsp baking soda
- 1/4 cup all-purpose flour
- 1/8 tsp ground cinnamon
- sour cream (optional)
- vanilla ice cream (optional)
- whipped cream (optional)

## Instructions

1. Make the sauce by whisking together one tablespoon of butter, two tablespoons of brown sugar, one tablespoon of cream, and a pinch of salt in a microwave-safe container.
2. Microwave the sauce mixture in 30-second intervals until melted and smooth, then set aside to thicken.
3. In a separate 12-ounce microwave-safe bowl, combine the dates with the remaining butter, remaining cream, and baking soda.
4. Microwave the date mixture for 30–60 seconds, then mash into a paste.
5. Stir in the flour, remaining sugar, cinnamon, and salt into the date paste until just combined.
6. Microwave the batter for 45–60 seconds until the top is set.
7. Serve warm topped with the prepared caramel sauce and a dollop of ice cream or whipped cream.
