# Kachumbari Lamb

## Ingredients

- 500 g lamb
- 1 tbsp ghee
- 1 whole onion
- 3 tsp garlic
- 2 tsp ground coriander
- 1 tsp black pepper
- 2 tsp salt
- 2 whole fresh tomato
- 2 whole onion
- 2 whole chili
- 1 handful coriander
- 2 whole lemon juice
- parchment paper
- rice (optional)
- fried plantain (optional)
- bread (optional)

## Instructions

1. Cut the lamb into small cubes.
2. Add ghee to the clay pot over hot coals.
3. Add the sliced onions, garlic, ground coriander, black pepper, and salt.
4. Add the lamb to the pot.
5. Add the kachumbari mix (tomatoes, onions, chili, coriander, lemon juice) to the pot and mix everything well.
6. Cover the pot securely with parchment paper and a lid.
7. Slow cook for approximately two hours.
