# Benihana's Fried Rice

## Ingredients

- 2 tbsp butter
- 1 tbsp garlic paste
- 2 tbsp soy sauce
- 2 tbsp cooking oil
- 1/2 cup onion, finely chopped
- 1/4 cup carrot, finely chopped
- 1/4 cup green onion, chopped
- 1 tsp garlic paste
- 2 cup cooked rice, day-old
- 2 whole egg
- 1 tbsp soy sauce
- to taste salt
- 1 pinch sugar
- to taste white pepper

## Instructions

1. In a small bowl, whisk together the butter, garlic paste, and soy sauce to make the garlic-soy butter.
2. Heat a wok over high heat and add a small amount of oil.
3. Add the onion, carrots, green onions, and garlic paste to the wok and stir-fry.
4. Add the day-old rice and continue stir-frying.
5. Add a little more oil and the two eggs, scrambling them directly in the wok before mixing them into the rice.
6. Season with soy sauce, salt, sugar, white pepper, and the prepared garlic-soy butter.
7. Finish with a sprinkle of green onions, mix well, and serve.
