# Mediterranean Mini Sweet Pepper and Cucumber Salad

## Ingredients

- 1 lbs mini peppers
- 1 lbs mini cucumbers
- 4 oz feta
- 0.5 red onion
- 2 tbsp parsley
- 0.25 cup EVOO
- 1 tbsp red wine vinegar
- 1 lemon juice
- 1 tsp salt
- 0 black pepper

## Instructions

1. Thinly slice cucumbers and peppers and add them to a salad bowl.
2. Thinly slice red onions and chop parsley, then add them to the salad bowl.
3. Crumble feta cheese over the salad.
4. Whisk together olive oil, red wine vinegar, lemon juice, salt, and pepper for the dressing.
5. Pour dressing over salad and enjoy!
