# Fresh Orange Fluid Gel

## Ingredients

- oranges
- fructose
- Kelcogel F
- citric acid
- salt
- xanthan gum
- water

## Instructions

1. Juice the oranges.
2. Combine dry ingredients.
3. Prepare an ice bath.
4. Add water to the pot.
5. Whisk dry ingredients into water to disperse.
6. Bring the mixture to a boil.
7. Turn off heat and add orange juice, stirring constantly.
8. Cool quickly to preserve fresh flavor.
9. Break up the gel.
10. Transfer gel into a blender.
11. Blend on medium until smooth.
12. Strain the gel (optional).
13. Remove air from the gel with a vacuum chamber (optional).
