## Ingredients

- 2 1/2-3 lb chuck roast
- 2 tsp salt
- 2 tsp pepper
- 2 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1/2 tsp cayenne
- 2 tsp brown sugar
- 1 tbsp olive oil
- 1 whole yellow onion, diced
- 5 clove garlic, minced
- 2 tbsp tomato paste
- 1 cup dry red wine
- 2 cup beef broth
- 2 whole bay leaves
- to taste fresh thyme
- 3 whole carrots, chopped
- 3 whole celery stalks, chopped
- 1 1/2 lb baby potatoes, washed
- 2 clove garlic
- 1 tbsp butter
- 1/4 cup whipped cream cheese
- 1 tsp dijon mustard
- 1/4 cup grated parmesan
- 1/3 cup milk
- to taste salt (optional)
- to taste pepper (optional)
- 1 tbsp cornstarch
- 1 tbsp cold water

## Instructions

1. Season the chuck roast with salt, pepper, paprika, garlic powder, onion powder, oregano, cayenne, and brown sugar.
2. Heat olive oil in a pot and sear the roast on all sides, then remove.
3. Add the diced yellow onion and minced garlic to the pot.
4. Stir in the tomato paste and deglaze with dry red wine.
5. Return the roast to the pot, then add beef broth, bay leaves, and fresh thyme.
6. Cover and bake at 300 degrees for 2 hours.
7. Remove the bay leaves and thyme from the pot.
8. Add the carrots, celery, baby potatoes, and 2 whole garlic cloves, then cover and bake at 300 degrees for 1 hour.
9. Remove the cooked potatoes and whole garlic cloves from the pot.
10. Mash the potatoes and garlic with butter, whipped cream cheese, Dijon mustard, grated Parmesan, milk, salt, and pepper.
11. Shred the meat in the pot.
12. Combine the cornstarch and cold water to make a slurry, then add it to the pot to thicken the sauce.
