## Ingredients

- 2.5 cups white sugar
- 0.5 cup kayo syrup
- 0.5 cup water
- 2 egg whites
- 2 tablespoons white sugar
- 1 teaspoon strawberry extract
- 1.5 cups chopped pecans
- 1 cup candied cherries

## Instructions

1. Combine two and a half cups of white sugar, a half cup of kayo syrup, and a half cup of water in a pot.
2. Cook the syrup on medium-high heat for about five to ten minutes, until it spins a thread.
3. While the syrup is cooking, beat two egg whites and two tablespoons of white sugar in a mixer on high until stiff peaks form.
4. Once the syrup spins a well-defined thread, slowly pour it into the mixer with the beaten egg whites while the mixer is still running on a medium speed.
5. Continue mixing to cool the mixture and cook the egg whites.
6. Add one teaspoon of strawberry extract to the mixture and mix well.
7. Scrape any excess divinity off the mixer beater and put it back into the bowl.
8. Add one and a half cups of chopped pecans to the mixture and stir them in.
9. Continue stirring the mixture until it cools down and thickens, and its finish changes from glossy to slightly matte.
10. Once the mixture is thick and ready to lay out, add one cup of quartered and dried candied cherries.
11. Stir the cherries into the mixture until well combined.
12. Using two spoons, scoop out portions of the divinity onto freezer paper, ensuring each portion holds its shape and falls minimally.
13. If a portion does not set, scrape it back into the bowl, stir it a bit more, and then try laying it out again.
14. Allow the laid-out divinity to dry for one to two hours before packaging.

## Equipment

- mixer
- pot
- spoon
- colander
- spaghetti strainer
- paper towel
- freezer paper

## Tips

- Always have your egg whites ready before the syrup.
- When adding syrup to egg whites, pour slowly to prevent explosion.
- Use strawberry extract instead of cherry for better flavor and easier availability.
- For pure white divinity, shake chopped pecans in a colander to remove small pieces.
- Drain candied cherries and cut them into quarters, then wipe them dry to maintain consistency.
- Add dry ingredients (pecans) first, then wet ingredients (cherries) once the mixture starts thickening.
- The divinity is ready to lay out when it switches from a glossy to a more matte finish and holds its shape when stirred.
- If the divinity doesn't set, scoop it back into the bowl and stir it more.
