## Ingredients

- 2 tablespoons water
- 1 tablespoon active dry yeast
- 2 tablespoons brown sugar
- 0.5 cup butter
- 1 cup milk
- 2 eggs
- 4 cups flour
- 1 teaspoon salt

## Instructions

1. Add 2 tablespoons of warm water into a glass.
2. Add 1 tablespoon of active dry yeast to the warm water.
3. Add 1 tablespoon of brown sugar to the yeast mixture.
4. Mix the yeast, water, and brown sugar together and set aside to bloom.
5. Scald 1 cup of milk on the stove until it starts to steam and small bubbles appear around the edge, then remove from heat and let it cool to a lukewarm temperature.
6. Cream together 1/2 cup of unsalted butter and 1 tablespoon of brown sugar in a mixing bowl until smooth and fluffy.
7. Mix the cooled scalded milk into the butter and sugar mixture.
8. Add the bloomed yeast mixture to the bowl and mix well.
9. Add two lightly beaten eggs to the mixture and mix until combined.
10. Sift in half of the 4 cups of flour and 1 teaspoon of salt, then mix until almost fully incorporated.
11. Sift in the remaining flour and mix until the dough is fully combined.
12. Mix the dough hard for about a minute or two to develop gluten, as it's too soft to knead.
13. Place the dough in a pan with hot water to create a warm, humid environment.
14. Cover the bowl with a tea towel or plastic wrap and let it rise until it doubles in size for about an hour.
15. Once doubled in size, punch the dough down.
16. Take equal portions of the dough (about 12 portions), stretch each piece, and push it up under itself to form a smooth top, pinching the bottom seams together.
17. Place the shaped rolls on a lightly greased 9x13 inch baking pan.
18. Brush some melted butter over the formed rolls.
19. Cover the rolls with plastic wrap and a tea towel, then let them rest and rise again until doubled in size for about 30 minutes to an hour.
20. After the second rise, brush a little more melted butter on top of the rolls.
21. Bake the rolls at 400 degrees Fahrenheit for approximately 18-20 minutes until golden brown.
22. Remove the rolls from the oven and serve hot.

## Tips

- The dough is too soft to knead, so mix it hard for a few minutes instead, which can be done with a stand mixer.
- For more precise roll sizes, weigh out the dough portions (each roll was 88 grams in the video).
- Everything is better with butter.
