# Traditional Aloo Gosht

A traditional, slow-cooked Pakistani curry featuring tender beef and soft potatoes in a rich, aromatic gravy.

## Ingredients

- 0.5 kg beef with bones
- 0.5 cup oil
- 2 medium onion paste
- 1 tbsp whole garam masala
- 4 tbsp ginger garlic paste
- 1 cup yogurt
- 1 tbsp garam masala powder
- 1 tbsp coriander powder
- 1 tbsp cumin powder
- 1 tsp kashmiri red chili powder
- 1 tsp red chili powder
- 0.5 tsp turmeric
- salt (optional)
- several green chili
- 2 medium blended tomatoes
- 1 tbsp tomato paste
- several potato
- water
- 3 green cardamom
- 0.5 tsp roasted cumin seeds
- 0.5 tsp roasted coriander

## Instructions

1. Sauté onion paste in oil until light pink.
2. Add whole spices, ginger garlic paste, and beef; fry well.
3. Mix garam masala powder, coriander powder, cumin powder, kashmiri red chili, red chili powder, turmeric, and salt into the yogurt.
4. Add the yogurt mixture to the meat and fry until oil separates.
5. Add green chilies, blended tomatoes, and tomato paste.
6. Add potatoes and water, then pressure cook for 15 minutes.
7. Roast and crush green cardamom, cumin, and coriander.
8. Add the crushed roasted spice mix to the pot and simmer for 5 minutes.

## Tips

- If not using a pressure cooker, add the potatoes halfway through the meat cooking time.
