## Ingredients

- 1 8 oz bag dry soy curls
- 1/4 cup olive oil
- 1/3 cup soy sauce, full-sodium
- 1/2 tbsp liquid smoke
- 1 tbsp white vinegar
- 1 tbsp maple syrup
- 1 tsp paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp ground mustard
- 1/2 tsp cayenne pepper (optional)
- to preference black pepper
- 1/4 tsp kosher salt

## Instructions

1. Preheat oven to 250°F and line a large baking tray with parchment or a silicone baking mat.
2. Cover soy curls with boiling water and allow to soak for 10 minutes to rehydrate.
3. Drain the soy curls and let them cool, then wring out as much excess liquid as possible using a clean tea towel, nut milk bag, or cheesecloth.
4. Whisk all marinade ingredients together in a small bowl.
5. Pour the marinade over the soy curls in a large mixing bowl and toss well to combine.
6. Spread the soy curls on the baking tray in an even layer.
7. Bake for 1 hour, stirring every 20 minutes to ensure even dehydration, adding 5-15 minutes if needed to reach desired texture.
8. Remove from oven and let cool completely before storing in an airtight container for several hours or overnight to improve texture.
