# Scots Rabbit

## Ingredients

- 70 g finely grated cheese
- 1 tbsp mascarpone
- 1 /8 tsp allspice
- 1 /8 tsp white pepper
- 1 /8 tsp black pepper
- 1 /8 tsp mustard powder
- 0.5 tsp whisky
- 1 butter
- 1 mayonnaise
- 1 sourdough bread

## Instructions

1. Mix the cheese, mascarpone, allspice, white pepper, black pepper, mustard powder and whisky in a bowl until a paste is formed.
2. Spread butter and mayonnaise on one side of a slice of sourdough bread.
3. Fry the bread in a pan until golden and crisp.
4. Spread the cheese paste over the untoasted side of the bread.
5. Grill the bread until golden and blistered.
6. Remove from the grill and leave to rest for 5 minutes.
7. Cut into pieces and serve.
