- 2 cups all purpose flour
- 2 tsp sugar
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1 tsp sea salt
- 1 cup shredded cheddar cheese
- 1/4 cup chives, finely sliced
- butter (optional)
- honey (optional)
- flakey salt (optional)

## Instructions

1. Preheat oven to 425 degrees.
2. Add 1 cup of buttermilk to a bowl and place it in the freezer for about 10 minutes to chill.
3. Mix flour, sugar, baking soda, baking powder, and salt in a bowl.
4. Melt butter in a small pot and allow to cool slightly.
5. Combine chilled buttermilk and melted butter in a large mixing bowl, stirring until little clumps of butter form.
6. Stir in cheddar cheese and chives.
7. Gradually add flour mixture and mix until combined.
8. Transfer dough to a floured surface and work with hands until fully incorporated, adding more flour if too sticky.
9. Shape dough into a rough rectangle, fold in half, rotate 90 degrees, and repeat a few times.
10. Flatten dough into a 1 inch rectangle and divide into 6 squares, trimming outer edges for better lift.
11. Place biscuits on a parchment paper lined baking sheet and brush with remaining buttermilk.
