## Ingredients

- chicken breast
- flour
- egg
- bread crumbs
- salad mix
- Parmesan cheese
- mayonnaise
- Dijon mustard
- minced garlic
- lemon juice
- black pepper

## Instructions

1. Slice the chicken breast.
2. Tenderize the chicken.
3. Season the chicken with pepper.
4. Dredge the chicken in flour, then dip it in egg, and coat with breadcrumbs.
5. Place the chicken on a baking sheet, spray with oil, and bake.
6. Combine salad mix with Parmesan cheese.
7. In a bowl, mix mayonnaise, Dijon mustard, minced garlic, lemon juice and pepper.
8. Add the dressing to the salad mix and toss.
9. Serve the salad over the baked chicken.
10. Garnish with Parmesan cheese.
