- 210 g Warm Water (100 F)
- 6 g Salt
- 6 g Sugar
- 6 g Instant Yeast
- 10 g Olive oil
- 1 Shallot
- 3 cloves garlic
- 0.5 tube tomato paste
- 0.5 cup Vodka
- 1 cup crushed tomatoes
- 1 tsp oregano
- 1 cup heavy cream
- Low-moisture part-skim mozzarella
- pepperoni
- fresh basil
- ricotta
- parmesan
- Sesame seeds

## Instructions

1. Combine the wet and dry ingredients for the dough in a large mixing bowl.
2. Knead the dough until smooth.
3. Rest the dough for 30 minutes for its first rise.
4. Perform three rounds of stretch-and-folds on the dough, with a 30-minute rest in between each round.
5. After the last stretch-and-fold, let the dough rest for an hour and a half for a long rise.
6. Punch down the dough to release air.
7. Spread sesame seeds on a baking sheet and roll the edges of the dough in the seeds.
8. Pour olive oil into a cast iron pan, then place the dough in the pan and let it rest for another hour and a half for the final rise.
9. Prepare the vodka sauce by sautéing shallots and garlic in olive oil.
10. Add tomato paste, vodka, crushed tomatoes, oregano, salt, and heavy cream to the pan and cook until combined.
11. Once the dough is proofed, par-bake it in an oven preheated to 500°F.
12. Grate low-moisture part-skim mozzarella cheese.
13. Remove the par-baked crust from the oven.
14. Spread a layer of vodka sauce on the par-baked crust.
15. Add grated mozzarella cheese over the sauce, ensuring the edges are well-covered with cheese.
16. Arrange pepperoni slices on top of the cheese.
17. Bake the pizza for another 15 minutes.
18. Finish the pizza under the broiler to get a well-done look on the crust and toppings.
19. Remove the pizza from the cast iron pan and place it on a wire rack to cool slightly.
20. Add more vodka sauce, ricotta cheese, fresh basil, and grated parmesan cheese on top of the cooked pizza.
21. Slice the pizza and serve.
