# Prime Rib with Rosemary Salt

- Language: en

## Ingredients

- 5.6 lbs prime rib on the bone
- garlic
- rosemary
- thyme
- Worcestershire sauce
- Rosemary salt (rosemary leaves, sage leaves, peeled garlic, lemon zest, salt)
- black pepper

## Instructions

1. Decide whether to get prime rib on or off the bone. If on the bone, consider using bones for sauce or roasting them as ribs.
2. Trim the fatty end of the prime rib, saving the fat for Yorkshire pudding or roast potatoes.
3. Score the top of the beef in small squares, not going too deep.
4. Douse the prime rib with Worcestershire sauce and rub it in all around.
5. Prepare Rosemary salt by stripping rosemary and sage leaves, adding them to a food processor with peeled garlic, lemon zest, and salt, then blending for one minute.
6. Generously season the prime rib all the way around with Rosemary salt.
7. Season with black pepper.
