# Taco Pasta Salad

This Taco Pasta Salad combines the flavors of tacos with an easy pasta salad, packed with protein and fiber, making it a filling and delicious meal prep option.

## Ingredients

- 2.5 cups fusili
- 1 lb ground turkey
- 1.5 tablespoon olive oil
- 1 package low sodium taco seasoning
- 1 can (540ml) lentils rinsed and drained
- 1 cup corn kernels
- 0.25 cup fresh cilantro chopped
- 1 can (540ml) black beans rinsed and drained
- 1 pint cherry tomatoes sliced
- 3 green onions sliced (both the whites and greens)
- 0.75 cup plain Greek yogurt (2% works best)
- 0.25 cup mayonnaise
- 2 limes just the juice
- 1.5 tablespoon low sugar BBQ sauce (Stubb's is my favourite)
- 0.5 teaspoon chili powder
- 0.5 teaspoon cumin
- 0.25 tsp paprika
- 0.5 teaspoon salt
- 0.125 teaspoon black pepper

## Instructions

1. Add cooked fusili pasta to a large bowl.
2. Add cooked ground turkey (or ground meat of choice) seasoned with low sodium taco seasoning to the pasta.
3. Add rinsed and drained black beans to the bowl.
4. Add chopped red bell pepper to the bowl.
5. Add sliced cherry tomatoes to the bowl.
6. Add sliced green onions to the bowl.
7. Add corn kernels to the bowl.
8. Add chopped fresh cilantro to the bowl.
9. Pour the yogurt dressing over all the ingredients in the bowl.
10. Mix all ingredients thoroughly in the bowl until well combined.
11. Portion the taco pasta salad into glass containers for meal prep.
12. Seal the containers with lids.
