# Bain Cucumber Tomato Salad

This BCT salad is a snacktacular version of a BLT with cucumber, bacon, and cheese.

## Ingredients

- 2 large Persian cucumbers
- 4 pieces bacon
- quartered cherry tomatoes
- cubed Colby Jack cheese
- 1 tablespoon Duke's mayo
- Melinda's fire roasted jalapeno sauce

## Instructions

1. Slice two large Persian cucumbers using a mandolin.
2. Rough chop four pieces of bacon.
3. Layer the bacon and cucumber into a deli container.
4. Add quartered cherry tomatoes on top.
5. Add cubed Colby Jack cheese.
6. Add a heaping tablespoon of Duke's mayo.
7. Squeeze in Melinda's fire roasted jalapeno sauce.
8. Shake it up to fully combine.
