# Peanut butter noodles

## Ingredients

- 1 tbsp cooking oil
- 250 g pork mince
- 1 pinch salt
- 3 whole spring onion
- 2 clove garlic
- 1 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 whole lime
- 1/4 cup water
- 1 tbsp chili crisp
- 1 packet udon noodles

## Instructions

1. Heat oil in a pan over medium heat.
2. Add pork mince to the pan, season with salt, and cook until browned.
3. Finely chop the spring onions, keeping the white and green parts separate. Smash and chop the garlic.
4. Break up the cooked pork, then add the chopped spring onion whites and garlic.
5. Stir in the peanut butter, soy sauce, rice vinegar, and the juice of 1/2 lime.
6. Add a splash of water and stir until the mixture forms a glossy sauce.
7. Add chili crisp to taste.
8. Blanch the udon noodles in boiling water for one minute, then add them to the pan.
9. Add the spring onion greens, toss to combine, and serve.
