- 3 cloves garlic cloves
- oregano
- paprika
- salt
- black pepper
- all-purpose flour
- 1 teaspoon salt
- 1 cup plain Greek yogurt
- cucumber
- dill
- mint
- lemon juice
- tomatoes
- red onion

## Instructions

1. Prepare chicken thighs, removing bones and skin.
2. Place the chicken between parchment paper and flatten with a rolling pin.
3. Transfer the chicken to a bowl or a metal pan.
4. Add olive oil, mustard, minced garlic, oregano, paprika, salt and black pepper to the chicken.
5. Mix the chicken thoroughly with the seasonings.
6. Prepare the chicken for the vertical cooking. Cut an onion in half and place it on a skewer in the middle of a baking pan.
7. Stack the chicken thighs on the skewer, ensuring it forms a compact tower.
8. Set your outdoor oven to 375°F.
9. Place the chicken stack inside the oven.
10. While the chicken is cooking, start making the dough for the flatbreads. In a bowl, combine flour and salt.
11. Add Greek yogurt to the flour mixture.
12. Mix and knead the dough until smooth.
13. Divide the dough into small, equal portions.
14. Roll out each portion into a flat, round bread.
15. Cook the flatbreads in a pan until golden brown and slightly puffed.
16. Prepare the tzatziki sauce. In a bowl, add Greek yogurt.
17. Grate cucumber and add it to the yogurt.
18. Add dill, mint, lemon juice, salt, pepper, and minced garlic to the mixture.
19. Mix well until all ingredients are combined and the sauce is smooth.
20. Check on the chicken; it should be golden brown and cooked through. Baste it with the accumulated juices.
21. Carefully slice the cooked chicken from the stack.
22. Assemble the gyros. Spread a generous amount of tzatziki sauce on a flatbread.
23. Add a layer of sliced chicken.
24. Slice fresh tomatoes and red onions.
25. Add the sliced tomatoes and red onions on top of the chicken.
26. Sprinkle with paprika and oregano.
27. Fold the flatbread to create a wrap.
28. Serve and enjoy!
