## Ingredients

- 4 tbsp neutral oil
- 1 whole roma tomato
- 1 whole green tomatillo
- 1/2 whole white or purple onion
- 1-2 whole garlic clove
- 5-20 whole dried chile de arbol
- 1/2 cup water
- 1 tsp salt

## Instructions

1. Heat neutral oil in a pan on medium-high heat.
2. Add the roma tomato, green tomatillo, onion, and garlic cloves to the pan.
3. Stir continuously for 5-8 minutes until the vegetables have a sear on all sides.
4. Add the chile de arbol to the pan.
5. Mix for 6-8 minutes, ensuring the chiles do not burn and infuse the oil to an orange color.
6. Transfer the seared vegetables and oil to a blender once tomatillos are dark green and tomatoes are blistered.
7. Add water and salt to the blender.
8. Blend until smooth.

## Tips

- Use 5 chiles for a little heat, 10 for a nice kick, 15 for spicy, and 20 if you love spicy.
- Taste for salt at the end.
