# Isomalt sail

A decorative isomalt sail used for cake decoration.

## Ingredients

- 100 g isomalt
- 25 ml water
- edible gold dust (optional)
- edible glaze (optional)

## Instructions

1. Heat isomalt and water in a pan until it reaches 160 degrees Celsius/320 degrees Fahrenheit.
2. Let the mixture cool slightly and pour onto a silicone mat.
3. Leave to cool for a minute or two to remove air bubbles.
4. Gently lift the silicone mat and place it on top of an upside-down glass.
5. Leave to cool completely until set.
6. Gently remove the silicone mat.

## Tips

- Overheating will turn the isomalt yellow; not boiling it enough will prevent it from setting.
- You can paint the edges with edible gold dust.
- Place the isomalt sail inside an airtight container until use to prevent it from getting cloudy.
- You can spray it with edible glaze to keep it clear.
